This slow ripening cane sugar develops a sweet, rich carmelized flavour.

Small-scale farmers in El Jabon, Huilla Colombia, cultivate Panela de Los Andes. A Fair price is paid to farmers for the sugar cane. The cane is hand-processed in the farmer's community.  After the cane juice is evaporated into crystals it is trucked to Fruandes Ltda in Bogota for packaging.  Fruandes is a Fair Trade Organization recognized by IFAT.

Three varieties of sugar cane grow in this region (often intermixed on each farm) at an altitude of 2200 meters above sea level. The farmers use environmentally friendly methods of farming including: hand weeding, compost, and no pesticides or herbicides.
